New wine room in The Singular Santiago Hotel
CHECK OUT THE NEW WINE ROOM IN CHILE’S VERY OWN THE SINGULAR SANTIAGO HOTEL
The Singular Santiago Lastarria Hotel, which opened nearly a year ago in Chile’s capital, continues to improve upon the already award-winning property.
Highlighting the hotel’s dedication to a strong food and beverage program led by Executive Chef Laurent Pasqualetto, the 62-room property has built out and just unveiled a new, private underground wine room celebrating Chile’s position as a versatile leading wine region.
“La Cava” – as it is known – has the allure of a secret bunker located underground and through double-height, imposing wooden doors. Inside the intimate space, a dining table for 10 is at the centerpiece while over 2000 bottles of wine from around Chile line the wall racks. Singular Sommelier Rocio Castillo has successfully set out to show the breadth and depth of Chile as a wine producing country
“We are fortunate that Chilean wines come from a very diverse array of terroirs,” Castillo explains. “The variety to which we have access not only allows us to provide our guests a dynamic selection of good wines, but also highlights our connection to all things Chilean as it is very much at the core of our brand.”
The new wine room, housing the likes of Carignan, Cabernet, Merlot, Syrah and others, is available for private breakfasts, lunches, dinners and executive meetings for up to 10 persons or for small group wine tastings up to 15. Chef Laurent Pasqualetto has designed a tapas menu that perfectly pairs with each varietal for light bites, as well as full menu options pulled from The Singular Restaurant’s contemporary menu of primarily locally sourced ingredients including Patagonian King Crab, Tilefish, Duck Breast, Free Range Chicken and Salmon to name a few.
